This is a very versatile recipe as you can stuff the cherry tomatoes with any filling of your choosing. You can make as many as you'd like as well.

Ingredients

Cherry Tomatoes (quantity is up to you) but this recipe calls for 12

1/2 cup of diced fresh mozzarella

1 TBSP of Extra Virgin Olive Oil

1 TBSP of fresh basil leaves finely chopped

1/2 clove of freshly minced garlic

Salt to taste

Preparation

Step 1: Cut the top off the tomato. Turn the tomato 'on it's head' and cut a very shallow slice of the bottom. Be careful not to cut too deep; the object here is allow the tomato to stand on a plate and not roll around.


Step 2: Scoop out the insides of the tomato and reserve. Mix all the remaining ingredients together and add half of the tomato insides. Mix to coat.


Step 3: Gently stuff each cherry tomato with the mozzarella mixture.
