A Note Before You Start
The original name of this recipe is Sailor’s Warning but I felt it was inappropriate given that the old proverb goes: "red sky at night, sailor's delight." I also decreased the amount of pineapple juice as I felt it was too sweet and I added a few splashes of San Pellegrino for some effervescence.
Ingredients
4 cups of watermelon chunks - divided
3/4 cup of pineapple juice
8 oz of Tequila Blanco
San Pelagrino
Lime wedges for garnish
Preparation
Step 1: Pureé 3 cups of watermelon in a blender until smooth. Strain through a fine mesh strainer. This should yield a little over 1 cup of juice.
Step 2: Combine the watermelon juice, pineapple juice and tequila together in a pitcher and stir to mix.
Step 3: Fill a highball glass with ice. Pour the tequila mixture over the ice leaving enough room for a splash of San Pellegrino. Garnish with a slice of lime and a piece of watermelon.
